You can’t out exercise a bad diet. Over the last several months I have gotten lazy with my diet ( Sausage egg and cheese bagels on sunday mornings while drinking coffee anyone? ). I haven’t gained weight thankfully but time to get back on track. I am not going to go crazy and give up wine or anything just making some better choices. In that vein, I bought a new cookbook recently. It’s called Cooking Solo by Klancy Miller. It has yummy recipes like Chocolate Pancakes, Fritatta for one, and Cantalope Mint Sorbet. What is the first recipe I make? The Emerald Elixir. It contains swiss chard, spinich, cilantro and pineapple. I like that it’s not a juice so it keeps the fiber and nutrients and I can make it in my blender, although after buying the ingredients from fresh direct I am not sure it wouldn’t cost the same to buy it pre-made But then I wouldn’t have the joy of chopping greens in my tiny kitchen, so I gave it a try. You can see the before in the blurry photo above. I forgot to take an after photo. It was very green.
It actually tasted pretty good. It was a little too cilantro-y for me so maybe a little less cilantro or a little more pineapple. I would definitely make it again, but its a bit labor intensive to make in the morning before work though. I can feel myself getting healthier already!
